Butter chicken / restaurant style butter chicken / how to make butter chicken at home/ homemade butter chicken / easy butter chicken recipe / murgh makhani

Chicken marination:
- 400 gram boneless chicken
- 1 tbsp red chilli powder
- salt to taste (1/2 tsp)
- 3 tbsp plain yoghurt
- 1 tsp lime juice
- 1 tbsp ginger garlic paste
- 1/4 tsp cumin powder

Ingredients for shallow frying chicken:
- 2 tbsp unsalted butter or cooking oil of your choice

Directions:
- cut chicken into 1 inch cubes. Add the ingredients listed above for chicken marination and mix it well. Put it in the refrigerator for atleast 30 mins to 1 hour.

- On medium heat add butter or cooking oil to a pot/pan. Add marinated chicken pieces. Don't overcrowd the pot. Cook the chicken pieces 3-5 mins on each side. Once done take it out.

Ingredients to make puree for gravy:
- 1 tbsp olive oil or cooking oil of your choice
- 2 tbsp unsalted butter
- 1 nos. onion (medium)
- 3 nos. garlic cloves
- 1/2 inch ginger piece
- 1 inch cinnamon stick
- 2 cardamom pods
- 2 cloves
- 4 nos. tomatoes (large)
- 12 nos. cashew nuts
- salt to taste (1 tsp)
- 1 tbsp chilli powder
- 1 tsp garam masala powder
- 1/2 cup water for blending

Ingredients to make gravy:
- Salt to taste (1/2 tsp)
- 1 tbsp butter
- 1 tsp sugar
- 1/4 cup water
- 1/4 cup cooking cream

Directions:
- Roughly chop onion, garlic, tomato and slice the ginger piece.

- In a pot on medium heat add oil and butter. Once butter is melted add diced onion, garlic, ginger, cinnamon stick, cardamom pods, cloves, diced tomato, cashew nut, salt to taste (1 tsp), chilli powder and garam masala powder.

- Lid on cook 6-8 mins on medium heat. Stir occasionally in between. Turn off heat and let it cool down.

- Once cooled down, add the mixture to a blender with water and blend it to a smooth paste. Seive the blended mixture.

- Add the blended mixture to the same pot in which chicken pieces were shallow fried. Keep flame low to medium heat and stir frequently.

- Add salt to taste (1/2 tsp), unsalted butter, sugar, water, cooking cream.

-Mix well and add cooked chicken pieces. Lid on, cook 3-5 mins on low to medium heat or until gravy is according to your desired thickness.

- Serve and enjoy with naan, parata, flat bread (roshi).

RECIPE 1: Bajiyaa / samosa
Ingredients:
For mixing by hand:
- 1 1/2 nos. onion (medium)
- 15 nos. curry leaves
- 1/2 tsp salt
- 1 tbsp lime juice
- 1 canned tuna
- 1/2 cup smoked tuna

For cooking:
- 3 tbsp cooking oil
- 1 1/2 nos. onion (medium)
- 4 nos. pandan leaves (3")
- 3 nos. garlic cloves
- 12 nos. curry leaves
- 1/4 nos. scotch bonnet chilli (according to spice preference)
- Salt to taste (1/2 tsp)
- 1/2 tsp cumin powder
- 1/4 tsp chilli powder
- 1 tbsp curry powder
- 1/4 tsp cardamon powder
- 1/2 tsp cinnamon powder
- 1/4 tsp black pepper powder
- 1/8 tsp tumeric powder (pinch)
- 1 tbsp sugar

For dough:
- 2 cups flour
- 1 tsp salt
- 2 tbsp cooking oil + 1 tsp cooking oil
- 1 cup hot water (approx.)

For flour paste:
- 3 tbsp flour
- 1/4 cup water

Directions:
- Slice the onion, finely chop garlic cloves, slice curry leaves and smoked tuna.

- In a mixing bowl, add 1/2 of the sliced onion (1 1/2 nos. onion), curry leaves and lime juice. Mix well while squeezing as much as possible. Add canned tuna and smoked tuna and mix everything well. Set it aside.

- In a pot, add cooking oil, rest of the sliced onion, pandan leaf, chopped garlic cloves, curry leaves and scotch bonnet chilli. Saute till onions are tender/translucent.

- Turn heat to low and add cumin powder, chilli powder and curry powder. Mix 1-2 mins on low heat.

- Add the mixed onion and tuna mixture from earlier. Mix 2-3 mins on low to medium heat.

- Add cinnamon powder, cardamon powder, black pepper powder, tumeric powder and sugar. Mix 2-3 mins on low to medium heat.

- Turn of the heat and let it cool down.

- Add flour, salt, 2 tbsp cooking oil and hot water. Mix everything well and kneed a soft dough. I used hot boiling water and kneed till it cools down. Add 1 tsp cooking oil and kneed again.

- Divide the dough into small dough balls. It is a little bigger than the size normally used to make flat bread roti.

- Roll the doughs round using a rolling pin. Once tawa is hot on medium heat, add rolled roti and cook 3-5 seconds each side.

- Remove to a plate / cutting board. Stack them up on top of each other. Cut them into 4 pieces.

- Make a thick flour paste by mixing flour and water.

- Fold cut piece in the center, apply the flour paste and fold again. Press the corner to seal well. Make pockets like this to put the filling.

-Put around 1 tbsp of the cooked filling, tuck in, apply flour paste and then fold again as shown in the video. Do press corners to seal properly.

- On low to medium heat, fry it till golden browned.

- Enjoy!

RECIPE 2: Fuh kavaabu

Ingredients:
- 1 nos. onion
- 1 nos. garlic
- 15 nos. curry leaves
- 1/2 scotch bonnet chilli
- 1/2 nos. lime juice
- 1 1/2 tsp salt to taste
- 1/4 tsp cumin powder
- 1/2 tsp black pepper powder
- 1/2 tsp tumeric powder
- 1/2 cup smoked tuna
- 1 can tuna (180g)
- 1/2 cup grated coconut
- 1/2 cup all purpose flour

Directions:
- In a mixing bowl, add fine diced onion, chopped garlic, sliced curry leaves, fresh chilli, lime juice and salt to taste. Mix well. Add cumin, black pepper and tumeric powder & mix well.
- Add smoked tuna & mix well. Add grated coconut and mix well. Add canned tuna, mix well.
- Gradually add flour and mix well. If the mixture is too dry, add little bit of water.
- Take around 2 tbsp and shape kavaabu as in video. Once oil is hot on low to medium heat, add it one by one and fry till golden browned. Fry it in batches till all done.
- Enjoy.

RECIPE 3 : Bis keemiya (egg rolls)
Ingredients:
- 2 tbsp cooking oil
- 1 nos. onion (small)
- 1/3 nos. scotch bonnet chilli
- 1 1/4 cup sliced cabbage
- 1/4 cup canned tuna (optional)
- Salt to taste (3/4 tsp)
- 1/4 tsp black pepper powder
- 1/2 tsp lime juice
- 2 nos eggs (hard boiled)

For dough:
- 1 cup flour
- 1/2 tsp salt
- 1 tbsp cooking oil
- 1/2 cup hot water (approx.)

- In a pot on low to medium heat, add cooking oil, fine diced onion, chilli, scredded and sliced cabbage and canned tuna. Mix 2-3 mins.

- Add salt to taste, black pepper powder and lime juice. Mix 2-3 mins and turn off the heat.

- Add hardboiled and diced egg pieces. Gently mix it in and let it cool down.

- In a mixing bowl, add the ingredients listed for dough and knead a soft dough. I used very hot boiling water and kneaded it till it cools down a bit.

- Divide it into small dough balls of around golf ball size pieces.

- Roll it, put around 2 tbsp of the cooked egg filling, fold the sides as shown in video, apply water and then fold again as shown in the video. Repeat the process, until no more filling.

- Once oil is hot, on low to medium heat, fry it till golden browned.

- Enjoy!

This is how hanaakuri mas was prepared in old days in maldives.It is very important to follow the recipe properly.We eat hanaakuri mas with roshi and omlette.

⁣Masbai is one of our favourite picnic lunch meals. I love to eat masbai when on fishing trips, beach day lunch or a picnic in some uninhabited island of the Maldives. I love to eat it in the beach near the sea where I can see the beach. However, I do love to eat masbai at home just to make the day special.

Ingredients:
- 4 tbsp cooking oil
- 1 nos. onion sliced (large)
- 4 nos. garlic cloves chopped
- 1 nos. thin ginger slice
- 10 nos. curry leaves
- 3 pcs. rampa leaf (2 inch each)
- 1/2 of scotch bonnet chilli (according to your taste)
- 2 fresh green chilli (according to your taste)
- 1 tbsp black pepper seeds
- 2 cups smoked tuna (valhomas)
- 2 cups rice, washed and drained
- 1 tsp tumeric powder
- 4 1/2 cups water
- Salt to tast (1 tbsp)
- 6 nos. bilimbi

Directions:
- Wash the rice thoroughly until water runs clear. Let it drain in a strainer

- Cut the smoked tuna (valhomas) into 1cm chunks. Finely slice the onions, chop the garlic, cut the chillies and billimbi into 3 pcs each.

- In a pot add cooking oil, sliced onion, chopped garlic, ginger slice, curry leaves, rampa leaf and chilli according to your taste. (P.S. I forgot to add ginger slice earlier in the video, so added it later. I normally add it together with onions and ginger).

- Saute till onions are tender and lightly browned only. Once lightly browned, add black pepper seeds and smoked tuna. Stir fry for 5-6 mins on medium heat.

- Add washed rice and stir fry for another 5-6 mins on medium heat.

- Add tumeric powder and stir for 2-3 minutes until well combined.

- Now add water, salt, bilimbi and cook for 5 minutes on medium-high heat (lid off).

- Put the lid on and let it cook on low-medium heat for 15-20 minutes. After 5 mins on low heat check if salt is according to your taste and let it continue to cook.

- Open the lid after 15-20 mins and check if all the water is completely gone. If not let it continue to cook further. Mine was cooked between 15-20 mins.

- Once all the water is completely gone, stir the rice, turn off the heat and put the lid on let it simmer in the heat for 10 mins. After 10 mins, serve the rice.

- Enjoy it as it is or with theluli rihaakuru / normal rihaakuru, fried moringa leaves and fried chillies.

Dhon Riha is a fairly easy Maldivian curry. This a mildly spiced curry which falls in between kirugarudhiya and Maldivian spiced curry/ havaadhulee riha. There are different ways of making this curry. This is how my mom normally makes this curry. She also makes this curry without sauteing the onions in oil. I used yellow fin tuna for this recipe. Can use other types of fish as well.

Ingredients for grinding dhon riha paste:
- 1 onion (medium)
- 2 garlic cloves
- 1/2 cup grated coconut
- 1/2 tsp tumeric powder
- 1 nos. cinnamon stick (1.5")
- 3 nos. cardamom pods
- 1/2 tbsp cumin seeds
- 1 tsp black pepper seeds
- 1 tsp coriander seeds
- 10 nos. curry leaves
- 1/2 tbsp fennel seeds
- 4 nos. ginger, thinly sliced (1")
- 3/4 cup water, for grinding (or as needed)

Ingredients for cooking curry
- 2 tbsp cooking oil
- 1 nos. onion (medium)
- 2 nos. garlic cloves
- 20 nos. curry leaves
- 3 nos. pandan leaf piece (2")
- Salt to taste (2 tsp)
- 2 cups thin coconut milk
- 2 cups water
- 1/3 nos. scotch bonnet chilli (according to your spice preference)
- 500 gram fresh tuna
- 1/2 cup thick coconut milk

Directions:
- Grate 1 medium size coconut. Set aside 1/2 cup of the grated coconut. Use the rest of the grated coconut and take 1/2 cup of thick coconut milk and 2 cups thin coconut milk. You can also use the grinder to express more milk. I put the grated coconut in the grinder after setting aside 1/2 cup.

- Thinly slice 1 onion and roughly dice 1 onion. Finely chop 3 garlic cloves and roughly dice 2 garlic cloves.

- Cut tuna into 1" cubes or into your normal curry cut size.

- In a blender, add the ingredients listed above for grinding/ making the dhon Riha paste, except water. While grinding gradually add water as needed. I added 3/4 cups of water in total.

- In a pot on medium heat add sliced onion, chopped garlic, curry leaves, pandan leaves. Saute till onions are lightly golden browned.

- Add the grinded curry paste mixture and mix for 2-3 minutes.

- Maintain the heat low to medium.

- Add salt, thin coconut milk, water and scotch bonnet chilli according to your spice preference. Let it cook for 5-6 mins and stir occasionally.

- Add fresh tuna and cook for another 3-4 mins.

- Add thick coconut milk and cook for 1-2 mins and turn off the flame.

- Serve and enjoy with roshi/ Maldivian flat bread/ roti, paratha, parata, naan, plain rice, bread etc.
